Cheese and Caramelised Onion Pork Steaks with Wedges and Garlicky Greens
Print RecipeIngredients
- 450g Potatoes
- 30g Mature Cheddar Cheese
- 2 Pork Loin Steaks
- 1 Garlic Cloves
- 40g Onion Marmalade
- 150g Sliced Spring Greens
Instructions
Step 1: Prepare the Wedges
Start by preheating your oven to 200°C. Cut the potatoes into wedges, approximately 2cm wide, leaving the skin on. Arrange the wedges on a baking tray, drizzle with oil, and season with salt and pepper. Toss to ensure they’re well coated. Roast on the top shelf of your oven until they’re golden and soft inside, which should take about 25-30 minutes. Remember to turn them halfway through.
Step 2: Ready the Remaining Ingredients
While the wedges are roasting, peel and grate the garlic. Grate the cheddar cheese as well. Take the onion marmalade and break it up in a bowl using a spoon.
Step 3: Begin Cooking the Pork
Heat a drizzle of oil in a pan over medium-high heat. Season the pork with salt and pepper. Once the pan is hot, add the pork, frying until it turns golden brown. This should take about 4-5 minutes on each side.
IMPORTANT: Make sure to wash your hands after handling raw meat.
Transfer the pork to a baking tray (don’t wash the pan yet). Spread the onion marmalade evenly over each steak, then top with the grated cheese, pressing it down with the back of a spoon.
Step 4: Grill the Pork
Once the potatoes are cooked, move them to the bottom shelf of your oven and switch the oven to the grill setting on high heat.
TIP: If your grill is separate from your oven, you can leave your potatoes where they are and just heat your grill to high.
When the grill is hot, place the pork under it until the cheese is golden and bubbly, which should take about 3-5 minutes.
IMPORTANT: The pork is cooked when it’s no longer pink in the middle. Let it rest for 2 minutes before serving.
Step 5: Sauté the Greens
While the pork is grilling, return your pan to medium-high heat. If needed, add a drizzle of oil. Add the spring greens and a splash of water, seasoning with salt and pepper. Stir fry until they soften, about 4-5 minutes, then add the garlic. Stir together and cook for another minute, then remove the pan from the heat.
Step 6: Serve Your Meal
Once everything is ready, plate up the pork alongside the wedges and garlicky greens. Drizzle any juices from the tray over the top and enjoy your meal!
