- 15ml Cider Vinegar
- 260g Diced Chicken Breast
- 20g Chipotle Paste
- 60g Mature Cheddar Cheese
- 1 Spring Onion
- ½ Carton of Black Beans
- 1 Carrot
- 64g BBQ Sauce
- 450g Potatoes
- 100ml Water
Instructions
Step 1: Prepare the Wedges
Start by preheating your oven to 200°C. Cut the potatoes into 2cm wide wedges without peeling them. Arrange the wedges on a large baking tray, drizzle with oil, and season with salt and pepper. Toss the wedges to ensure they’re well coated, then spread them out in a single layer. Roast these on the top shelf of your oven until they turn golden, which should take about 25-30 minutes. Remember to turn them halfway through the cooking time.
Step 2: Get Started on the Sauce
While the wedges are roasting, pour the specified amount of water into a large saucepan and place it over high heat. Add the BBQ sauce, cider vinegar, chipotle paste, and a pinch of salt and pepper. Stir everything together and bring the sauce to a boil.
Step 3: Cook the Chicken
