- 2 Baking Potatoes
- 1 Onion
- Closed Cup Mushrooms
- 1 Carrot
- 2 Garlic Cloves
- 25g Panko Breadcrumbs
- 280g Diced Chicken Breast
- 1 Chicken Stock Powder
- 150g Crème Fraîche
- 2 Tbsp Olive Oil
- 100ml Water
Instructions
Step 1: Cook the Potato
The first step in making Prince Harry’s Chicken Pie is cooking the potato. Start by preheating your oven at 220°C and boiling water in a large saucepan – add 1/4 tsp of salt! You will need to peel the potatoes and slice them into 1cm wide circles.
Once you’ve done this, chuck the potato into the saucepan (once the water is boiling!) and cook until they are soft – this should take 12-15 minutes.
When the potato is done, carefully drain the water in a colander and and set aside.
Step 2: Finish Your Prep
You will need to halve, peel and thinly slice the onion for this next step. Same with the mushrooms. Then, trim the carrot, halve lengthways before slicing it into long 1cm wide strips and chopping into 1cm chunks.
You will need to peel and grate the garlic (if you don’t have a garlic press). Next, add the breadcrumbs into a bowl and mix them with olive oil.

Step 3: Fry The Chicken
Next, you will need to fry the chicken. Start by heating up a bit of olive oil in a frying pan on medium-to-high heat. Once the pan is hot, add the diced chicken to it and season it with salt and pepper based on your taste.
You will need to cook the chicken until it is browned, which should take around 6-7 minutes.
Step 4: Cook The Veggies
When you’re done cooking the chicken, transfer it to a dish and set it aside for the time being. Add a little bit more olive oil to the frying pan and chuck in the carrot and onion. Cook them on medium heat and stir the whole time until the veggies become soft – this should take around 4-5 minutes.
Then, add in the mushrooms and a drizzle of oil if needed. Turn up the heat slightly to medium-to-high and cook the veggies together until the mushrooms start to turn brown (around 5-6 minutes).
Now, add in the garlic and stir for about 1 more minute.
Step 5: Simmer The Food
Turn down the heat on the pan and pour in the water, then add the chicken stock. Make sure you bring the water to the boil and stir the whole time to dissolve the chicken stock.
Then, add the crème fraîche, turn down the heat and let it simmer gently for about 3-4 minutes.
Once the sauce has reduced you can add the chicken back into the frying pan and season it some more with salt and pepper.
Step 6: Put It In The Oven
Last but not least, transfer the contents of the frying pan into an ovenproof dish and top it off with the boiled potato slices. Then, sprinkle the dish with the breadcrumbs and season it with black pepper.
