- 60g Mature Cheddar Cheese
- 6 Streaky Bacon Rashers
- 225g Pork and Oregano Sausage Meat
- 20g Onion Marmalade
- 1 Apple
- 120g Coleslaw Mix
- 30g Dried Cranberries
- Mayonnaise
- 2 Burger Buns
- 450g Potatoes
- 1 Baby Gem Lettuce
- 1 Red Onion
Instructions
Step 1: Prepare the Wedges
Start by preheating your oven to 200°C. Cut the potatoes into 2cm wide wedges without peeling them. Arrange the wedges on a large, low-sided baking tray. Drizzle them with oil and season with salt and pepper. Toss the wedges to ensure they’re well coated, then spread them out in a single layer. Once your oven is hot, roast the wedges on the top shelf until they turn golden, which should take about 25-30 minutes. Remember to turn them halfway through the cooking time. If necessary, use two baking trays to ensure the potatoes are spread out nicely.
Step 2: Prep the Ingredients
Set aside one baby gem leaf per person. Trim the root from the rest of the baby gem lettuce and halve it lengthways. Thinly slice it widthways. Halve, peel, and thinly slice the red onion. Grate the cheese. Heat a drizzle of oil in a large frying pan on medium-high heat.
When the oil is hot, add the bacon rashers and fry until they turn golden and crispy, which should take about 2-3 minutes per side. Transfer the bacon to a plate. If needed, add a drizzle more oil to the pan and add the red onion. Cook, stirring frequently, until the onion softens, which should take about 4-5 minutes. Transfer the onion to a plate.
Step 3: Form the Burgers
In the meantime, put the pork sausage meat into a medium bowl and season with salt and pepper. Shape the sausage meat into one burger per person. Remember to wash your hands after handling raw meat.
Step 4: Cook the Burgers
Wipe out the frying pan and return it to medium-high heat. When the pan is hot, add the sausage burgers and cook until they turn golden on the outside, about 3-4 minutes per side. Reduce the heat to medium and continue cooking the burgers until they’re cooked through, which should take about 6-7 minutes. Turn the burgers every 2 minutes. The pork is cooked when it’s no longer pink in the middle.
Top the burgers with the red onion marmalade and half the grated cheese, then cover with foil or a lid to keep them warm and melt the cheese.
Step 5: Finalise the Dish
Grate the apple (no need to peel) and put it into a medium bowl with the slaw mix, baby gem, cranberry, and three-quarters of the mayonnaise. Mix everything together and season to taste. When the wedges have about 5 minutes left to cook, chop up one rasher of bacon per person and sprinkle it over the wedges along with the remaining cheese. Return the wedges to your oven and cook until the cheese has melted, which should take about 2-3 minutes.
Step 6: Serve the Dish
Halve the burger buns widthways and warm them in the oven for 1-2 minutes. Then, spread the remaining mayo across the bottom halves of the buns and top each with a reserved lettuce leaf. Divide the red onion among the buns and top with a burger and two rashers of bacon each.
