Pulled BBQ Chicken Burgers with Zesty Slaw and Chips
Print RecipeIngredients
- 450g Potatoes
- Mild Paprika
- 3 Chicken Thighs
- 120g Coleslaw Mix
- ½ Lime
- 75g Soured Cream
- BBQ Sauce
- 2 Glazed Burger Buns
Instructions
Step 1: Prepare the Chips
Start by preheating your oven to 200°C. Slice the potatoes lengthways into 2cm pieces, then chop them into 2cm wide chips. Arrange the chips on a large, low-sided baking tray. Drizzle them with oil, sprinkle paprika over them, and season with salt and pepper. Toss to coat the chips evenly, then spread them out in a single layer. Once the oven is hot, roast the chips on the top shelf until they turn golden, which should take about 25-30 minutes. Remember to turn them halfway through. If necessary, use two baking trays to ensure the chips are spread out nicely.
Step 2: Roast the Chicken
While the chips are roasting, lay the chicken thighs flat on a separate baking tray. Drizzle them with oil and season with salt and pepper. Roast the chicken on the middle shelf of your oven until it browns and cooks through, which should take about 16-18 minutes. Make sure to wash your hands after handling raw chicken and its packaging. The chicken is cooked when it is no longer pink in the middle.
Step 3: Prepare the Slaw
As the chicken and chips are cooking, put the coleslaw mix into a medium bowl. Zest the lime and cut it in half. Reserve 2 tablespoons of soured cream in a small bowl. Add the lime zest and the remaining soured cream to the coleslaw mix. Squeeze in some lime juice and season with salt and pepper, mixing well to combine. Taste and add more lime juice, salt, or pepper if needed. Set your zesty slaw aside for now.
Step 4: Prepare the BBQ Sauce
Once the chicken is cooked, remove it from the oven and place it on a board. Use two forks to gently pull the chicken apart. After you’ve pulled apart all the chicken, put it into a medium bowl. Add the BBQ sauce and mix well to ensure all of the chicken is coated in the sauce. Cover the bowl with foil to keep the chicken warm.
Step 5: Warm the Buns
Just before serving, cut the burger buns in half and put them in your oven to warm for 2-3 minutes.
Step 6: Serve
When everything is ready, place the buns on your plates. Pile the pulled BBQ chicken onto the bottom half of your buns. Spread the reserved soured cream onto the top half of the buns and sandwich them together. If you have any lime left, cut it into wedges. Serve the BBQ chicken buns with the paprika chips, zesty slaw, and any remaining lime wedges on the side. Enjoy your meal!
