- 450g Potatoes
- 30g Mature Cheddar Cheese
- 125g Baby Plum Tomatoes
- ½ Lemon
- 225g Pork and Oregano Sausage Meat
- 40g Onion Marmalade
- 2 Burger Buns
- 40g Rocket
- 2 tbsp Olive Oil for the Dressing
Instructions
Step 1: Prepare the Wedges
Preheat your oven to 200°C. Cut the potatoes into 2cm wide wedges (no need to peel them). Arrange the wedges on a large baking tray in a single layer. Drizzle them with oil, season with salt and pepper, and toss to ensure they’re well coated. Roast the wedges on the top shelf of your oven until they turn golden, which should take about 25-30 minutes. Remember to turn them halfway through the cooking time.
Step 2: Make the Burgers
Place the sausage meat in a mixing bowl. Use your hands to break it up and shape it into burgers, one per person.
Step 3: Cook the Burgers
Heat a splash of oil in a frying pan over medium heat. Add the burgers and cook them for 12-14 minutes. Turn them two or three times to ensure they cook evenly and don’t burn. You want them to be nicely browned.
IMPORTANT: The burgers are done when they are no longer pink in the middle.
Step 4: Prepare the Toppings
While the burgers are cooking, grate the cheese and break up the onion marmalade with a spoon. Halve the tomatoes. Cut the burger buns in half.

Once the burgers are cooked, remove the pan from the heat. Carefully place the cheese on top of the burgers, followed by a spoonful of the onion marmalade. Cover the pan with a lid (or wrap it tightly in foil) and set it aside, off the heat, for 3-4 minutes to allow the cheese to melt. Meanwhile, place the burger buns on a baking tray and warm them in the oven for 3-4 minutes.
Step 6: Finish the Salad and Serve
While the cheese is melting, squeeze the lemon juice into a mixing bowl and add the olive oil (see ingredients for amount), a pinch of salt, pepper, and sugar (if you have some). Whisk these ingredients together with a fork, then add the tomato and rocket. Toss the salad to ensure it’s well coated in the dressing. Serve the burgers in the buns with some salad and wedges
