- 450g Potatoes
- 50g Panko Breadcrumbs
- 3 Chicken Thighs
- 15ml Cider Vinegar
- 15g Sriracha
- 1 Pinch of Chilli Flakes
- 20g Maple Syrup
- 2 Burger Buns
- 120g Coleslaw Mix
- 75g Soured Cream
- 30g Blue Cheese
- 1 Egg
- 50ml Water for the Sauce
- 20g Butter
- 2 tbsp Mayonnaise
Instructions
Step 1: Preheat the Oven and Prepare Potatoes
Preheat your oven to 220°C/200°C fan/gas mark 7. Begin by chopping the potatoes lengthways into 1cm slices, and then further chop them into 1cm wide chips. There’s no need to peel the potatoes. Spread the chips onto a large baking tray, drizzle them with oil, and season with salt and pepper. Give them a good toss to ensure they are evenly coated with the oil and seasonings.
For those with more chips, using two baking trays may be necessary. Once the oven reaches the desired temperature, bake the chips on the top shelf for approximately 25-30 minutes. Be sure to turn them over halfway through the baking time for even cooking.
Step 2: Coat the Chicken in Breadcrumbs
While the chips are baking, move on to the chicken coating process. Crack the egg into a medium-sized bowl and whisk it thoroughly. Take another medium bowl and season the panko breadcrumbs with salt and pepper.
Now, season the chicken with salt and pepper as well. Dip each piece of chicken into the bowl with the whisked egg, ensuring it’s coated completely. Then, transfer the chicken to the bowl with breadcrumbs, pressing gently to ensure the coating sticks. Shake off any excess breadcrumbs and place the coated chicken on a clean plate.
Remember, after handling raw chicken and its packaging, wash your hands and any equipment used properly. Discard any remaining egg.
Step 3: Prepare the Buffalo Sauce
In a large frying pan, add the cider vinegar and the required amount of water for the sauce. Place the pan over medium-high heat and bring the mixture to a boil. Allow it to simmer until it reduces by half, which usually takes around 2-3 minutes.
Stir in the sriracha, chili flakes, and maple syrup until the mixture thickens further, approximately 1-2 minutes. Remove the pan from the heat. If your maple syrup has solidified, you can soften it by placing the container in a bowl of hot water for a minute. Stir in the butter until it’s completely melted. Transfer the prepared sauce to a small bowl and set it aside.
Step 4: Fry the Chicken
If needed, wipe out the frying pan to prepare it for frying the chicken. Heat the pan over high heat with enough oil to coat the bottom. It’s important for the oil to be sufficiently hot to ensure proper frying, so heat it for about 2-3 minutes.
Carefully place the coated chicken pieces into the hot oil. Reduce the heat to medium-high and fry the chicken until it turns golden-brown and is cooked through. This usually takes around 10-14 minutes in total. Be sure to turn the chicken every 2-3 minutes to ensure even frying. Add more oil to the pan if it seems dry. For larger batches of chicken, consider frying in batches. Check if it’s done by making sure the chicken is no longer pink in the middle. Once cooked, transfer the chicken to a plate lined with kitchen paper to remove excess oil.
Step 5: Prepare the Blue Cheese Slaw and Warm Buns
As the chicken finishes cooking, use the time to prepare the burger buns. Halve the buns, and with around 2 minutes of chicken cooking time remaining, place the buns on a baking tray and warm them in the oven for 2-3 minutes.
Step 6: Assemble and Serve
In a large bowl, combine the coleslaw and soured cream. Crumble the blue cheese over the mixture, and season with salt and pepper. Give everything a good toss to ensure all ingredients are well combined.
