Print RecipeIngredients
- 450g Potatoes
- 1 Carton of Black Beans
- 240g Beef Mince
- 30g Tomato Puree
- 20g Chipotle Paste
- 10g Chicken Stock Paste
- 4 Super Soft Tortillas with Whole Wheat
- 60g Mature Cheddar Cheese
- 1 Avocado
- 100g Greek Style Salad Cheese
- 150g Soured Cream
- 150ml Water for the Sauce
Instructions
Step 1: Start with the Wedges
Begin by preheating your oven to 220°C/200°C fan/gas mark 7.
Next, chop the potatoes into 2cm wide wedges, there’s no need to peel them. Place these wedges onto a spacious baking tray. Give them a drizzle of oil, a sprinkle of salt and pepper, then toss everything together to ensure an even coat. Spread the wedges out in a single layer on the tray, and if necessary, consider using two trays.
Once your oven is sufficiently hot, slide the tray onto the top shelf. Let the wedges roast until they develop a golden hue, which usually takes around 25-35 minutes. Remember to turn them over halfway through this cooking time.
Step 2: Get Prepped
While the wedges are undergoing their transformation, it’s time to tend to the other ingredients. Begin by draining and rinsing the black beans using a sieve. Place half of these beans in a small bowl and give them a rough mash with a fork.
Proceed by grating the Cheddar cheese.
In a large frying pan, heat a drizzle of oil over medium-high heat. Once the pan is hot, introduce the beef mince and let it fry until it turns brown, a process that generally takes about 4-5 minutes. While it cooks, use a spoon to break the mince into smaller pieces. Don’t forget to season the mince with salt and pepper. And remember, a thorough hand and equipment washing are essential after handling raw mince.
Step 3: Cook the Beans
Once the beef mince is invitingly brown, make sure to drain and discard any excess fat.
Stir in the tomato puree and chipotle paste (reduce the amount if you prefer less heat) and let them sizzle for about 1 minute.
Now, it’s time to add the water required for the sauce (check the pantry for the exact quantity), along with the chicken stock paste, and both the whole and mashed black beans. Bring this flavourful concoction to a gentle boil, then reduce the heat and let it simmer for about 10-12 minutes, while stirring occasionally. Season with salt and pepper as needed. And remember, the mince is fully cooked when it’s no longer pink in the middle.
Step 4: Prep the Quesadillas
As the beef mixture simmers, grate the Cheddar cheese.
Once the beef filling is ready, take your tortillas and lay them out on a baking tray that’s lightly oiled. On one half of each tortilla, spoon some of the beef mixture, then sprinkle with the grated Cheddar. Fold the other half of the tortilla over the filling, creating a semi-circle shape. Press down slightly to secure everything.
Give each folded quesadilla a light rub with some oil, then pop the tray into your oven, placing it on the middle shelf. Let the quesadillas bake until they turn golden, usually in about 8-12 minutes.
Step 5: Do the Avocado
While the quesadillas reach their golden glory, it’s time to prepare the avocado. Begin by halving it and removing the stone. Use a tablespoon to scoop out the avocado flesh into a bowl. Season this creamy goodness with a sprinkle of salt and pepper, then roughly mash it with a fork. Set this mashed avocado aside.
Step 6: Finish and Serve
Once the wedges are perfectly cooked, add some crumbled Greek-style salad cheese over them. Return the tray of wedges to the oven and allow the cheese to slightly brown, usually in about 5-6 minutes.
With all elements ready, it’s time to bring your delicious creation to the table. Serve the beef quesadillas alongside the cheesy wedges, accompanied by soured cream and the delightful mashed avocado.
And now, it’s time to savour the flavours and enjoy your satisfying meal!
