- 1 Bell Pepper
- 180g Linguine
- 1 Garlic Clove
- 1 Bunch of Chives
- 60g Chorizo
- 120g Sliced Mushrooms
- 1 Carton of Tomato Passata
- 10g Vegetable Stock Paste
- 25g Sun-Dried Tomato Paste
- 20g Grated Hard Italian Style Cheese
- ½ tsp Sugar for the Sauce
- 50ml Water for the Sauce
Instructions
Step 1: Prepare Your Ingredients
Begin by placing a large saucepan of water on the stove to boil and add 1/4 tsp of salt to the water for the pasta. Halve the pepper, discard the core and seeds, and cut it into 2cm pieces. Peel and grate the garlic, or use a garlic press for this step. Lastly, finely chop the chives, you can use scissors to make it easier.
Step 2: Cook the Linguine
Once the water in the saucepan comes to a boil, add the linguine and let it cook until it becomes tender, which should take around 12 minutes. After cooking, drain the linguine in a colander and then return it to the pan. Drizzle the linguine with some oil and stir it through to prevent sticking.
Step 3: Fry the Chorizo
Place a large frying pan over medium-high heat without adding any oil. When the pan is hot, add the chorizo and fry it until it starts to brown, which should take about 3-4 minutes. Once the chorizo is cooked, transfer it to a small bowl. Place the now-empty frying pan over medium heat and add a drizzle of oil if necessary.
Step 4: Simmer the Sauce
As the pan heats up, add the pepper and mushrooms to it. Fry them until they become golden and start to soften, which should take around 3-4 minutes. Stir in the grated garlic and cook for an additional 30 seconds. Then, add the cooked chorizo, passata, vegetable stock paste, sun-dried tomato paste, sugar, and the specified amount of water for the sauce. Season everything with salt and pepper. Bring the mixture to a boil and let it simmer until it thickens, which should take around 4-5 minutes.
Step 5: Combine and Stir
Once the sauce has reached the desired thickness, combine the cooked pasta and sauce in the larger of the two pans. Stir in half of the chopped chives and half of the hard Italian-style cheese. If the mixture seems a bit too thick, you can add a splash of water to adjust the consistency. Taste and season with salt and pepper if necessary.
