Beef Sloppy Joes on Ciabatta with Cheddar Cheese and Pea Shoot Salad
Print RecipeIngredients
- 240g Beef Mince
- Central American Style Spice Mix
- 1 Carton of Finely Chopped Tomatoes with Onion and Garlic
- 30g Mature Cheddar Cheese
- 2 Ciabattas
- 15ml Cider Vinegar
- 40g Pea Shoots
- 1 Medium Tomato
- 1 tbsp Olive Oil
- 2 tbsp Tomato Ketchup
Instructions
Step 1: Start Cooking
Heat a large frying pan over high heat with a bit of oil. Once the pan is hot, add the mince and cook until it turns a golden brown colour, which should take about 3-4 minutes. Use a spoon to break up the mince as it cooks. Remember to wash your hands and equipment after handling raw mince. After the mince has browned, drain any excess fat from it, then add the Central American style spice mix to the pan and stir for 2 minutes.
Step 2: Complete the Sauce
Add the chopped tomatoes and the required amount of ketchup to the mince. Season the mixture with salt and pepper and let it simmer until it thickens, which should take about 5-6 minutes. If the beef mixture seems a bit dry, add a splash of water.
Step 3: Prepare the Cheese
While you’re waiting, preheat your grill to high. Grate the Cheddar cheese.
Step 4: Finish Prepping
Cut the ciabattas in half. Place them on a baking tray with the cut side up, then put them under the grill to toast for about 3-4 minutes. Once they’re toasted, remove the tray. After the beef is cooked, spoon it over the ciabattas. The mince is cooked when it is no longer pink in the middle. Sprinkle the grated cheese over the beef and grill until the cheese melts, which should take about 3-4 minutes.
Step 5: Prepare the Salad
In the meantime, pour the cider vinegar and the required amount of olive oil into a medium bowl. Season the mixture with salt, pepper, and a pinch of sugar if you have some. Mix everything well. Cut the tomatoes into 1cm pieces and add them to the bowl.
Step 6: Serve the Dish
Just before you’re ready to serve, add the pea shoots to the tomato bowl and toss everything together. Serve the cheesy beef sloppy joes with the salad on the side. Enjoy your meal!
