Print RecipeIngredients
- 450g Potatoes
- 25g Panko Breadcrumbs
- 90g Monterey Jack Cheese
- 15g Honey
- ½ Cucumber
- 15ml Cider Vinegar
- Mayonnaise
- BBQ Sauce
- 360g Beef Mince
- 4 Rasher of Streaky Bacon
- 2 Glazed Burger Bun
- ½ Bunch of Dill
- Wholegrain Mustard
Instructions
Step 1: Prepare the Chips
Start by preheating your oven to 200°C. Slice the potatoes lengthways into 1cm slices, then chop these into 1cm wide chips. There’s no need to peel the potatoes. Arrange the chips on a large baking tray, drizzle them with oil, and season with salt and pepper. Toss the chips to ensure they’re evenly coated, then spread them out in a single layer. If necessary, use two baking trays. Once the oven is hot, roast the chips on the top shelf until they’re golden, which should take about 25-30 minutes. Remember to turn them halfway through.
Step 2: Make the Burgers
In a large bowl, combine the BBQ sauce, panko breadcrumbs, and the specified amount of water. Season this mixture with salt and pepper, then add the beef mince. Mix everything together with your hands until it’s well combined. Roll the mince into even-sized balls, then flatten these to make burger patties that are about 2cm thick.
IMPORTANT: Make sure to wash your hands and any equipment used after handling raw mince.
Step 3: Cook the Burgers
Heat a drizzle of oil in a large frying pan over medium-high heat. Once the oil is hot, add the burgers and fry them until they’re browned on the outside and cooked through, which should take about 12-14 minutes in total. Be sure to carefully turn them every 3-4 minutes and lower the heat if needed.
IMPORTANT: The burgers are cooked when they’re no longer pink in the middle.
While the burgers are cooking, grate the Monterey Jack cheese. Once the burgers are cooked, remove the pan from the heat, carefully place the cheese on top of the burgers, cover the pan with a lid (or loosely wrap it in foil), and set it aside off the heat for 3-4 minutes to allow the cheese to melt.
Step 4: Prepare the Honey Bacon
While the burgers are frying, arrange the bacon in a single layer on a lined baking tray. Drizzle the honey over the bacon and bake it on the middle shelf of your oven until it’s golden brown and crispy, which should take about 10-15 minutes.
IMPORTANT: Make sure to wash your hands and any equipment used after handling raw meat. Cook the bacon thoroughly.
Step 5: Final Preparations
In the meantime, cut the burger buns in half. Trim the cucumber, quarter it lengthways, and chop it widthways into small pieces. Roughly chop the dill. Combine the cucumber, dill, cider vinegar, and mustard in a bowl, season with salt, pepper, and the specified amount of sugar, and mix until combined. Set this aside. A few minutes before the chips are done, warm the burger buns in the oven for 2-3 minutes.
Step 6: Assemble and Serve
When everything is ready, divide the burger buns between your plates. Place a cheesy burger patty onto each bun base, top with the honey bacon rashers, and spread half the mayo onto the bun tops. Sandwich everything together. Serve the burgers with the chips, pickled dill cucumber salad, and the rest of the mayo for dipping. Enjoy your meal!
