Double Cheese Baked BBQ Burgers with Wedges and Salad

- 450g Potatoes
- 10g Panko Bread Crumbs
- 1 Medium Tomato
- 15ml Cider Vinegar
- 30g Red Leicester
- 2 Glazed Burger Buns
- Garlic Salt
- 240g Beef Mince
- 1 Baby Gem Lettuce
- 30g Mature Cheddar Cheese
- BBQ Sauce
- 2tbsp Water for the Breadcrumbs
- 1tbsp Olive Oil for the Dressing
Instructions
Step 1: Roast the Potato Wedges
Preheat your oven to 200°C. Cut the potatoes into 2cm wide wedges (no need to peel). Arrange the wedges on a large, low-sided, wide baking tray. Drizzle with oil, season with salt and pepper, then toss to coat. Spread them out in a single layer and roast on the top shelf of your oven until they turn golden, about 25-30 minutes. Turn them halfway through the cooking time.
TIP: If necessary, use two baking trays to ensure the wedges are spread out nicely.
Step 2: Prepare the Burgers
In a large bowl, combine the garlic salt, breadcrumbs, and the required amount of water. Season with salt and pepper, then add the beef mince. Mix with your hands until well combined. Roll the mince into even-sized balls and flatten them to make burger patties that are 1cm thick (1 per person).
IMPORTANT: Remember to wash your hands and all used utensils after handling raw meat.
Step 3: Cook the Burgers
Place the burgers on a baking tray lined with baking paper and bake on the middle shelf of your oven until they’re cooked through, about 18-20 minutes.
Step 4: Make the Salad
While the burgers are cooking, chop the tomatoes into 2cm pieces. Trim the root from the baby gem lettuce and separate the leaves. In a medium bowl, combine the vinegar and the required amount of olive oil. Season with salt, pepper, and a pinch of sugar. Mix together and add the tomatoes, stirring to combine. Set this aside.
TIP: We’ll add the lettuce later to prevent it from wilting.
Grate the Cheddar and red Leicester cheeses.
Step 5: Melt the Cheese
Once the burgers and wedges are cooked, move your potatoes to the bottom of your oven.
IMPORTANT: The burgers are cooked when they are no longer pink in the middle.
Remove the burgers from your oven and carefully pile the cheese on top of them, followed by the BBQ sauce. Turn your oven to grill setting, return your burgers to the oven under the grill, and cook until the cheese has melted, about 2-3 minutes.
Step 6: Plate and Serve
In the meantime, place the burger buns on the middle shelf of your oven to warm for 2-3 minutes. Serve the burgers and a couple of lettuce leaves per person in your buns. Add the remaining lettuce to the dressing and toss to coat (or leave some salad undressed if the kids don’t want it). Serve the salad and potato wedges alongside the burgers. Enjoy your meal!
